Kabocha Squash

Kabocha Squash. Ever heard of it? I found a recipe for roasted Kabocha squash on my new favorite website, Heather Eats Almond Butter, and have been longing to try it. One problem: kabocha squash was nowhere to be found. I searched Earth Fare, Food Lion, Harris Teeter, Fresh Market and even (I was desperate) Wal-mart. Nothing. 

I whined to Blair about not being able to find it. 

"That's because it doesn't exist," he said.

"What do you mean it doesn't exist?" I asked. "Of course it exists. There's a recipe for it."

"You vegetarians are so easy to con," he said. "All someone has to do is make up a vegetable and write about how healthy it is and you guys are all, 'Oh! I have to have my yumosummysquashicon. It's soooo healthy. Everyone should be eating yumosummysquashicon. People who don't eat yumosummysquashicon are stupid.'"

He shook his head. "It's a snipe hunt. This squash you want. Doesn't exist."

"Does too," I said. "I found it on wikipedia. And it's in season right now."

"Good thing you're pretty," said Blair. "Because you are oh-so-gullible." 

Ha! Who's laughing now? Me, that's who. Because guess what I found at Earth Fare yesterday? That's right. The mythical Kabocha Squash. I won't lie. I did a little victory dance around Blair last night, who did not look happy.
